Why Florian Guillaume recommends Refettorio Paris
“Bottura turns surplus food into beautiful meals, served with dignity. The beauty is part of it.”
A solidarity restaurant in Paris founded by three-Michelin-star chef Massimo Bottura and his NGO Food for Soul, created for the Milano Expo 2015 and now operating permanently in the 10th arrondissement. The Refettorio transforms surplus and near-expiry food donated by Rungis Market and supermarkets into nutritious meals served free to people experiencing poverty and precarity. Guest chefs have included Alain Ducasse, Anne-Sophie Pic, Daniel Humm and Virgilio Martínez. Architecture by Stéphane Ma
